Molini Certosa produces more than twenty types of semolina and flour suitable to cover all market needs. Furthermore, other types are produced with specific characteristics suitable to satisfy particular needs at the customer's request.
Flour is an essential commodity in the History of Humanity. The ancient art of milling wheat has always been perceived as a primarily manual activity. Yet a poetic side of this work constantly emerges filled with skill, dedication and love for the product produced. The “ First Ingredient” was collected from the mill and with this the very idea of the resulting products with their aromas and flavours. This idea has always belonged to all of us, written as an echo in the deepest and most ancient folds of our civilization.
In 1889 Molini Certosa Società per Azioni was founded from the union of four mills. The headquarters were established in Certosa di Pavia and a new plant was built where a medieval mill already stood. Since then, the external architecture of the building has remained substantially unchanged and it is now also classified as a building of historical/industrial interest.
Over the years however technical installations have been constantly updated which place the company at the forefront of the entire national milling sector. Tradition and innovation are combined together in perfect union.
Molini Certosa produces durum wheat semolina and soft wheat flours in the plant in Certosa di Pavia with a production capacity of approximately 600 tons of ground wheat / day and a storage capacity of finished products of up to 2,900 tons.All our plants have totally 'closed' and completely automated processing cycles thus avoiding any direct contact between the staff and the processing intermediates.Checking the milling process, the evolution of grinding techniques and continuous research on special flours have made it possible to produce products of the highest certified quality and manufactured on request even according to precise technical specifications provided by individual customers.
The entire production cycle is carefully checked and constantly tested in the company's laboratories to ensure the highest standards of quality and food safety. Our analytical laboratories are strategic to production and are equipped for complete analysis of wheat, milling intermediates, flour, and related by-products. The laboratories in the headquarters in Certosa di Pavia also take care of research and development of new qualities of flour and semolina.
Since 2019 Molini Certosa has been a partner of the "Carta del Mulino" project by pledging to promote 100% sustainable agriculture.
The "Carta del Mulino" is a set of innovative disciplinary practices for sustainable agriculture consisting of 10 rules designed to improve the quality of products, support the work of farming communities and give space back to nature in agroecosystems by promoting biodiversity, reducing the use of chemicals and safeguarding pollinating insects.
The company operates directly in sectors ranging from consumer goods, large scale food production, wholesalers, catering companies as well as individual artisan bakers. Molini Certosa products are delivered in bulk industrial tanks or standard packaging sizes.
